The noodles in question consist of an assorted beef mix in a light or dark beef broth, depending on the cooking style. This three-decade-long Yii Siang Hainan Ngiu Chap serves tasty and flavourful Hainan-style beef noodles. Expect a generous serving of tender and succulent assorted beef parts along with the slurp-worthy broth and noodles of your choice (mee hoon, kuey teow or mee). Available in medium and large sizes, you can also opt for your ngiu chap dish served with plain white rice or laksa style.

2) Kedai Kopi Nyuk Pau Baru

The small town of Menggatal is home to the famous ngiu chap that has been around for over 20 years. This Nyuk Pau Baru coffee shop offers syrupy noodles soaked into a bowl of savoury-sweet beef broth with assorted beef all mixed together. You get the morsel goodness of beef slices, tripes, meatballs and more which not only taste fresh but also nice to chew.

3) Kedai Kopi Cheng Wah

Here’s a haven of ngiu chap goodness that has been around — believe it or not — for over 50 years. The beef broth is well-cooked and tastes just right without being overly beefy. It goes well with all the ingredients mixed into the bowl — noodles and various beef parts such as beef slices, stews and tripes. As for the noodles, they have usual choices like yellow mee and rice vermicelli.

4) Tuaran Ngau Chap

Be it soup or dry, Tuaran Ngau Chap satisfies you with its bowl of goodies in an appetisingly savoury-sweet beef broth. Their ngiu chap packs all the good stuff including beef slices, meatballs, tripes and stew. They open as early as 7.30 am and serve right until late lunch at 3.30 pm. You can find their restaurant on the ground floor of Damai Plaza at Luyang Commercial Centre.

5) Kah Hiong Ngiu Chap

Kah Hiong Ngiu Chap’s savoury-salty delight of ngiu chap offers the choice of soup and kon lau (dry) version. You will get assorted mixes of fresh beef meat, beef stew, beef tripes and beef balls in a dark beef broth. Kah Hiong Ngiu Chap operates in a few outlets in Sabah including their HQ at Hilltop and others such as Inanam and Sandakan.

6) Fatty Ngau Chap

Fatty Ngau Chap serves their ngiu chap with all the ingredients you come to expect from this dish. Assorted beef pats from beef slices to beef balls and tripes with noodles in a dark, savoury-sweet broth. Their portion, in the meantime, is rather generous for the price you pay for. They also serve home-style Hainan free-range corn chicken rice.

7) Penampang Ngiu Chap

Penampang Ngiu Chap has been selling its signature ngiu chap since 2009, which has gained many loyal customers and newcomers too. Their ngiu chap is served generously with lots of ingredients (read: mixed beef parts from beef slices to tendons and balls), all of which complement well with the delectable beef broth. They serve other dishes but it’s their ngiu chap that tops the list from most customers coming here.

If you are around Papar town, stop by Wen Fang Kopitiam to try their Taiwan-style ngiu chap. Their darker-than-usual broth packs a robust beef taste with various bites and textures mixed all together. A bowl contains a hearty mix of tender beef slices, beef balls, tendons, juicy daikon and noodles. Plus, it’s reasonably priced.
