  • 2 zucchinis

  • 1 clove garlic, minced (about 1 teaspoon)
  • Pinch of red pepper flakes or chilli powder

Method:

  1. Wash the vegetables before they are sliced. Then leave them to dry on a sieve or use a salad spinner to get rid of the excess moisture.
  2. In another smaller bowl, mix together the salad dressing until they are of the same consistency.
  3. In the last step, toss the salad with the dressing just before you serve. Do not let the dressing soak the vegetables.

2) Easy chickpeas and diced tomato salad.

  • 250g boiled chickpeas
  • 2 large sweet tomatoes
  • 2-3 diced shallots

Dressing:
